Antioxidant Packed Pomegranate Guacamole
Today I went to drop off my son at his preschool class, only to be greeted by an admin telling me his classroom was closed due to a positive case in his classroom. So we drove back home, in a blizzard, and I attempted to work and prepare for my client call tomorrow with him home all day! Swoosh!! So anyway, it has just been one of those days. Guacamole to the rescue.
This guacamole is a recipe introduced to me by my friend Clara. She used to make it for our girls life group nights and I could not believe how good it was!
So this is a recipe inspired by Clara, and Cookie + Kate! I could not find the recipe for a while so I made it up differently than her, but then I found it and wanted to link hers here because it was originally where I learned of this creation from (via Clara).
I love this dish because it is SO packed with interesting flavors, it is so delicious. I mean, guacamole is delicious on its own, but the pomegranate seeds just really change the game. Not only is it super delicious but, it is packed with nutrients! Avocado is of course a wonderfully healthy fat, it also is full of fiber and folate. Pomegranate is a potent antioxidant packed with anti-inflammatory properties and vitamins. Red onion is full of flavonoids, quercetin and has antiviral, and antihistamine effects and is excellent for immune support. Cilantro is also packed with flavanoids and is a helpful anti-inflammatory. Guacamole is an incredible snack for blood sugar balancing and hormone support so this is an excellent snack, side item, or party food- great for the Super Bowl or as a festive Valentine’s dish!
